Spiced Chai Tea with Soy Milk

Ingredients
(Serves 2 small mugs or 1 generous one)
- 2 cups filtered water
- 2 nubs of fresh ginger (about 1 inch total), smashed
- 2 small nubs of fresh turmeric (or ½ tsp dried), smashed
- 4–6 green cardamom pods, cracked or smashed
- 6–8 whole black peppercorns
- 2 tsp loose leaf black tea (Assam or Darjeeling preferred)
- ¾ to 1 cup unsweetened soy milk
- Optional: raw honey or maple syrup, to taste
- Optional: pinch of cinnamon or ground nutmeg to finish
Instructions
- Add water, smashed ginger, turmeric, cardamom pods, and peppercorns to a small pot.
- Bring to a boil, then reduce heat and simmer uncovered for about 5–6 minutes, until the water turns golden and fragrant.
- Add loose leaf black tea and simmer for another 2–3 minutes.
- Turn off heat and pour in soy milk, allowing it to warm through without boiling.
- Strain the chai into your favorite mug using a fine mesh strainer.
- Sweeten with honey or maple syrup if desired, and sprinkle with cinnamon or nutmeg for a finishing touch.
Sip slowly, ideally while wrapped in something soft and listening to your body’s wisdom.
