Herbed Tomato, Cucumber & Cottage Cheese Salad

Ingredients
Salad Base:

1 cup cherry tomatoes, halved

1 cup cucumber, diced (Persian or English)

1/4 cup red onion, thinly sliced

1/2 cup low-fat cottage cheese

2 tbsp fresh herbs, finely chopped (parsley, basil, or dill)
Herb Dressing:

2 tbsp extra virgin olive oil

1 tbsp fresh lemon juice (or apple cider vinegar for tang)

1 small garlic clove, minced

Sea salt and black pepper to taste

Optional: pinch of red pepper flakes for heat
Instructions

Chop + Toss
In a medium bowl, combine cherry tomatoes, cucumber, and red onion. Add cottage cheese and gently fold to coat. Sprinkle in the chopped herbs, saving a bit for garnish. -
Shake Up the Dressing
In a small bowl or jar, whisk or shake together olive oil, lemon juice, garlic, sea salt, and pepper until well emulsified. -
Bring it Together
Pour the dressing over the salad and toss gently to combine. Adjust seasoning to taste. Add red pepper flakes if you’re craving a little kick. -
Plate + Serve
Divide between two plates or bowls. Garnish with reserved herbs and serve immediately for peak freshness.
