Herbed Tomato, Cucumber & Cottage Cheese Salad

Cool, creamy, and garden-fresh — this vibrant salad is a protein-rich ode to summer simplicity. With hydrating veggies, herby flavor, and gut-loving cottage cheese, it’s the perfect blood sugar–friendly lunch or refreshing side for warmer days.
Serves 2 | 20–30g protein per serving


 Ingredients

Salad Base:

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced (Persian or English)

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup low-fat cottage cheese

  • 2 tbsp fresh herbs, finely chopped (parsley, basil, or dill)

Herb Dressing:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice (or apple cider vinegar for tang)

  • 1 small garlic clove, minced

  • Sea salt and black pepper to taste

  • Optional: pinch of red pepper flakes for heat


 Instructions

  1. Chop + Toss
    In a medium bowl, combine cherry tomatoes, cucumber, and red onion. Add cottage cheese and gently fold to coat. Sprinkle in the chopped herbs, saving a bit for garnish.

  2. Shake Up the Dressing
    In a small bowl or jar, whisk or shake together olive oil, lemon juice, garlic, sea salt, and pepper until well emulsified.

  3. Bring it Together
    Pour the dressing over the salad and toss gently to combine. Adjust seasoning to taste. Add red pepper flakes if you’re craving a little kick.

  4. Plate + Serve
    Divide between two plates or bowls. Garnish with reserved herbs and serve immediately for peak freshness.
