Hearty Red Lentil & Brown Rice Soup
Aug 02, 2025Wholesome, satisfying, and simple to make—this nourishing soup blends protein-rich lentils and fiber-packed brown rice with fragrant spices and healthy fats to support digestion, steady energy, and balanced blood sugar. This recipe is famous from a restaurant called "Sababa's" here in Toronto, they have generously given The Toronto Star a recipe in the 80s or 90s. It's amazing and comforting.
Ingredients

1¼ cups red lentils, rinsed and soaked

½ cup brown rice, rinsed and soaked

⅓ cup avocado oil

1 large yellow onion, chopped

6 cups vegetable broth

1 tablespoon ground cumin

1 tablespoon olive oil

1 tablespoon sea salt (adjust to taste)

Lemon wedges (optional, for serving)
Instructions

Prep the Grains & Legumes
Soak red lentils and brown rice separately for a few hours or overnight to reduce cooking time and improve digestibility. Drain before cooking. -
Sauté the Onion
In a large saucepan, heat the avocado oil over medium heat. Add the chopped onion and sauté until softened and fragrant, about 5 minutes. -
Add Liquids and Main Ingredients
Pour in the warm water, then add the soaked lentils and rice. Bring to a boil. -
Season & Simmer
Stir in vegetable stock, ground cumin, olive oil, and sea salt. Reduce heat and simmer gently for 15–20 minutes, until lentils and rice are tender and soup has thickened. -
Serve
Ladle into bowls and serve with fresh lemon wedges to brighten the flavor. Pair with your favorite wrap or a crisp green salad for a complete, nourishing meal.
