Ingredients
Makes 6 pops (depending on mould size)
-
2 cups Greek yogurt (full-fat for creaminess or low-fat for lightness)
-
2–3 tablespoons honey or maple syrup (to taste)
-
1 teaspoon vanilla extract
-
Pinch of sea salt
Chocolate Coating:
-
1 cup dark chocolate chips (70% cacao or higher)
-
1 tablespoon coconut oil
Optional Add-ins:
-
Fresh berries or diced fruit (e.g., strawberries, raspberries, mango)
-
Chopped nuts or seeds (almonds, pistachios, chia)
-
Coconut flakes or granola
Directions
-
Prepare the Yogurt Base
In a mixing bowl, stir together the Greek yogurt, sweetener, vanilla extract, and a pinch of sea salt. Taste and adjust for desired sweetness. Keep in mind the chocolate coating will add contrast. -
Customize Your Pops (Optional)
Gently fold in any fruit, nuts, or other mix-ins to add texture and flavor layers. -
Fill the Moulds
Spoon the yogurt mixture into popsicle moulds, leaving a little room at the top for expansion. Insert sticks and freeze for at least 4 hours or until completely firm. -
Make the Chocolate Coating
In a heatproof bowl, melt the dark chocolate and coconut oil together in 20-second microwave intervals, stirring between each until glossy and smooth. Let cool slightly (but not harden) before dipping. -
Dip & Set
Remove frozen pops from the moulds. Dip each one quickly into the melted chocolate, letting excess drip off. Optionally, sprinkle with extra toppings like crushed nuts, coconut, or flaky sea salt. Lay on a parchment-lined tray and freeze for 10 minutes to set. -
Enjoy or Store
Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
