Fudgy Beet Brownies

Earthy, rich, and deeply chocolatey, these beet brownies are the ultimate functional indulgence. Packed with fiber, antioxidants, and natural sweetness from grated beets and maple syrup, they deliver satisfying decadence with hormone-supportive benefits—perfect for that balanced life moment.

Ingredients

Makes one 8x8 pan (9–12 brownies)

  • 1 cup finely grated raw beet (about 1 medium beet, peeled)

  • 2 large eggs

  • ½ cup maple syrup

  • ¼ cup melted coconut oil or avocado oil

  • 1 teaspoon vanilla extract

  • ⅓ cup unsweetened cocoa powder

  • ½ cup almond flour

  • ¼ cup oat flour (or sub: gluten-free all-purpose flour)

  • ½ teaspoon baking powder

  • ¼ teaspoon sea salt

  • Optional: ½ cup dark chocolate chips or cacao nibs

  • Optional: 1 tablespoon ground flaxseed for added fiber

 

Directions

  1. Preheat oven to 350°F (175°C). Line an 8x8” baking pan with parchment paper.

  2. In a large bowl, whisk together eggs, maple syrup, melted oil, and vanilla.

  3. Fold in the grated beet and mix until evenly distributed.

  4. In a separate bowl, whisk together cocoa powder, almond flour, oat flour, baking powder, salt, and flaxseed (if using).

  5. Add the dry ingredients to the wet mixture and stir until just combined. Fold in chocolate chips if using.

  6. Pour batter into prepared pan and smooth the top.

  7. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs but not wet batter.

  8. Let cool completely in the pan before slicing into squares. Store in fridge for up to 5 days (they get fudgier overnight!).
