Fiesta Fiber Bowl: Zesty Black Bean Salad

Ingredients
(Serves 2–3)
- 1 can black beans (398 mL / 14 oz), drained and rinsed
- 1 tomato, diced
- ½ red bell pepper, finely chopped
- ¼ red onion, finely chopped
- ¼ cup chopped fresh cilantro
- Zest of ½ lime
- Juice of 1 lime
- 1 tbsp extra virgin olive oil
- ½ tsp ground cumin
- ½ tsp dried oregano
- ½ tsp raw honey (or maple syrup)
- Sea salt and black pepper, to taste
Instructions
- In a medium bowl, combine black beans, tomato, red pepper, red onion, and cilantro.
- In a small bowl, whisk together lime zest, lime juice, olive oil, cumin, oregano, honey, salt, and pepper.
- Pour dressing over the salad and toss well to coat evenly.
- Let sit for 10–15 minutes before serving to allow flavors to meld.
- Serve chilled or at room temperature, on its own or over greens, quinoa, or wrapped in lettuce.

- Make it a meal by topping with avocado, pumpkin seeds, or a soft-boiled egg.
